Our new Executive Chef, Nick Bolton, has spruced up our restaurant menu and just in time for the Bank Holiday!

For a city that has food at its heart, Chef Nick, has created a menu that not only features dishes for everyone to love, but that also aims to bring the best quality ingredients, for the best price with the best experience to customers. Whether you’re after a delicious light bite or hearty Sunday lunch, a vibrant buddha bowl, or traditional fish & chips – all made using locally sourced ingredients – this menu has it all.

Fancy trying something new? Our beetroot tartar with a jalapeno ketchup is a chef’s favourite – providing a vibrant twist on your usual traditional take. Amongst the array of new dishes lies a West Beach classic and Chef’s favourite, the sweet and smokey Brisket Burger, with a blueberry bbq sauce. If a traditional seaside classic is what you’re after, the new menu features scampi, breaded cod and whitebait too. We are beside the sea of course!

Meet the suppliers behind the menu:

At BA i360 we are passionate about celebrating everything Sussex has to offer. From working with local suppliers to encapturing the essence of the environment, our new menu makes sure to provide tasty dishes whilst supporting and sustaining local businesses.

Fish Galore, Brighton & Hove

Our gorgeously fresh fish served in Fish, Scampi, and Squid dishes are supplied by local seafood specialist, Fish Galore, who are committed to ethical and sustainable fishing.

Brighton Sausage Company, Brighton’s North Laine

All of our delicious meaty dishes, including our brand new pork roast, is supplied to us by handmade free-range sausagemakers, Brighton Sausage Co – an independent butchers who use locally sourced ingredients and only work with suppliers who focus on quality, consistency and animal welfare.

Real Patisserie, Hove

Our Sourdough bread is freshly baked just a stone’s throw away in Hove, by traditional artisan bakery and national bread winners, Real Patisserie. This delicious Sourdough, which is served toasted with our brunch dishes, is made using a rye sourdough starter that came to life in 1999 and baked in a stone decked oven giving it a wonderfully crisp crust and mouth-watering caramelised aroma.

Adams Wholesale Food Suppliers, Worthing

Our deliciously fresh seasonal fruit and veg served across all our dishes are supplied to us by a family-run business, Adams Wholesale Food Suppliers. Adams sources fruit and vegetables from neighbouring counties – so if it’s not available in Sussex, we are still able to support local producers within the UK.

A little bit more about our new Executive Head Chef, Nick Bolton… 

  • I grew up in: Mersyside
  • Now I live in: Kemptown, Brighton
  • My first job was: A Kitchen Porter
  • My career was most influenced by: My mother, who is also a chef.
  • The best piece of advice I was given: “I’d rather be looking at it than looking for it”
  • When I need inspiration I: Eat around the town. My favourite restaurants are Amarillo at Drakes, Terre a Terre, and Indian Summer.
  • I love what I do because: I love seeing people enjoying something I have created. Plus my office overlooks the West Pier – there’s no better office view in Brighton than mine!
  • I love Brighton & Hove because: It’s a cool, vibrant and diverse place to live.
  • When I’m not cooking I’m: Sleeping! Or, spending time with Andrea, my partner.
